Developed slowly through evaporation rather than industrial processing, our salt has a softer, more rounded flavour that enhances rather than masks. Naturally present minerals such as magnesium, potassium and calcium help give it depth, brightness and character.

Filtered naturally through sea algae beds before entering the pans. The algae enrich the water with magnesium before a single crystal has formed.
No heating. No machinery. Just sun and time — usually a week of slow evaporation under the Portuguese summer sky.
We rake the waters every day to ensure even crystallisation. This patient attention is what gives our salt its distinct flavour profile.
Salt pyramids form at the pan edges and dry naturally. We carry them to the warehouse by hand — no machinery, no shortcuts.
